Full of Beans

I often find myself running out of ideas for a family dinner. However, I have recently discovered that by serving up a different kind of salad now and again can make me feel as though I have invented a whole new meal.
Below is a salad recipe which is so simple to make, but just a little different and I’m sure you will enjoy it throughout those warm summer nights.
 
BEAN SALAD
 
1 small packet frozen green baby beans
1 tin (420g) four bean mix
1 small red onion
½ green capsicum
Salt & pepper
 
Dressing
3 tablespoons Olive oil
1 tablespoon Malt vinegar
1 tsp Raw sugar
 
1.            Place frozen green beans in hot water and bring to boil, simmer and leave to cool .
2.            Finely slice red onion and green capsicum and place in large bowl
3.            Add four bean mix, salt and pepper and green beans.
4.            Stir together dressing ingredients and mix through the beans.
